Reese peanut butter cheesecake

For The Crust
4 1/2 cups crushed Oreo cookies(cream included)
1 cup chopped roasted peanuts
1/2 cup butter, melted
For The Filling
2 lbs cream cheese, softened (4 blocks)
5 eggs, at room temperature
1 1/2 cups firmly packed brown sugar
1 cup smooth peanut butter (not natural-style)
1/2 cup whipping cream
1 teaspoon vanilla extract
12 Reese's Peanut Butter cups, broken into small pieces
Directions:
preheat oven to 275
Cookies,peanuts,butter, crush em all up together, I had to use a blender, but I think a food processor would be better!
press into a greased spring form pan.
Mix together( with electric mixer): cream cheese,5 eggs,brown sugar, peanut butter, 1/2 cup whipping cream, vanilla, mix until smooth(mine always has a few lumps of cream cheese, don't worry) after mixed  use wooden spoon to fold in peanut butter cup pieces, poor batter onto the crust prepared pan. Bake for 11/2 hours.
chill for at least 5 hours, I spruced my cheesecake up with extra reese pieces and carmel.

weekend and Lemon Chicken Recipe.

I saw a dead cat on the side of the road yesterday while I was driving, It made me super sad I'm so girly these days. ASIDE from that random note of sadness I had a great weekend with some great kids, maybe I'm crazy but it made me want to actually have kids of my own. I made them this lemon chicken for dinner and they loved it, truly it is rather amazing and herrrreeee is the recipe:)
*4 Chicken Breasts, fillet them so they are flat ( or sometimes I cut the chicken into peices as seen above.)
*2 eggs *8 tbls of lemon juice
*11/2 cup flour *3/4 tsp garlic powder * 3/4 tsp seasoning salt * 1/2 tsp chili powder
* 1/4 cup butter *3 cups boiling water( in this water put in some sort of chicken flavoring, either squares or powder, use according to directions)
* 1 box of pasta ( pasta is the best but sometimes I just make rice)
* some sort of vegetable, I usually use carrots or broccoli
Part one
Beat eggs and 2 tbls  of lemon juice in a bowl
mix flour, chili powder, garlic powder and season salt together in another bowl.
dip chicken in the egg mixture and then coat in the flour mixture, set aside on a plate
Part two
in a large skillet melt butter
in a medium pot boil water, remaining lemon juice and add chicken flavor
when butter is melted on medium heat put chicken in and brown on both sides, when both sides are browned
pour the boiling water into the skillet let sit covered for 20 minutes turning chicken over after 10 min.during the 20 minutes you can cook the pasta, usually I put carrots or broccoli in with the pasta to save boiling time,
Serve chicken over hot pasta and vegetables, the liquid you cooked the chicken is really yummy, I usually put it on the pasta!

I don't know a good title....and Cookie recipe:)

Well I have been having a rough few days.. I don't know why, just been down, I actually know exactly why but I musn't use up all this space with my problems.. haha. This whole not being able to sleep cause of to many things on my mind deal has gotta stop tho.. or Im gonna look like a raccoon... a raccooon with great hair at least.
After Christmas I bought a new truck and I am LOVING it, its so beautifully shiny, or it was anyways, this past week has been hard on it with all the snow melting. How bout that weather eh.. minus 39.. Don't miss that!
I thought I would add a recipe of some fantabulas cookies Brittany and I made at christmas time, I think I will make heart ones for valentines day...I'm kinda iffy about valentines day but whatever.
          Sugar Cookies                                                  
1 cup butter    2 cups sugar
2 eggs             3 tsp. vanilla

1 cup sour cream 1 tsp. salt

2 tsp. baking soda  5 1/2 cups flour

In mixer, cream butter and sugar, and then add eggs and vanilla. Add sour cream. Combine salt, soda, and flour, and add to mixture.

Use a spatula to carefully slide under each cookie and place onto greased cookiesheets. Bake at 375 for 7-8 minutes.  These cookies will not look done but do not.. I repeat DO NOT put them back in the oven, they will not taste good if they are hard and crunchy!


Let them cool for about...half an hour on a wire cooling rack. then decorate as you wish. They are so delicious:)

Candy Cane Truffle Recipe.

Ingredients: 1/2 cup plus 2 Tablespoons of whipping cream
8 Ounces semisweet baking chocolate finely chopped ( I "chopped" it with the blender)
Half a cup or more of crushed up candy cane.

Directions: In a small sauce pan boil whipping cream ( I added some grated orange peal for flavour)
Bring to a boil, then remove from heat for 15 minutes, during this 15 minutes take some time to prepare a baking sheet with wax paper. You should also have your chocolate finely chopped the smaller the better so after ALOT of wasted time trying to chop the chocolate I eventually just threw it all in the blender, if you do that its a good idea to put the chocolate in the fridge for a few minutes before hand as the blender heats up and melts the chocolate!
Put the sauce pan of cream back on the burner and bring to a boil. Once boiling poor over the chocolate( which should be in a heat- proof bowl) stir until smooth. Pour chocolate onto un UNLINED baking sheet and put into the freezer for about 15 minutes.
Using a table spoon, scrape the chocolate to form balls roughly about 1 inch. Roll in the candy cane dust (which I also used a blender for) and then place on the wax paper prepared cookie sheet, and there you have it! Simple!

Sweet:)


This is a dish That I make every year for thanksgiving! Not only does it have interesting colors it has a wonderful taste!

Sweet potatoe Apple bake
2 yams
4 apples
1/2 cup butter
3/4 brown sugar
sprinkle of cinnamon

peel yams, chop into cubes,
peel and core apples cut into cubes
cube the butter
mix it all together adding some cinnamon,
put into a baking dish, sprinkle Brown sugar on top, Bake on 350 for 20 minutes!
